- 1 (8 oz.) pkg. elbow macaroni
- 2 Tbsp. reduced calorie margarine
- 2 Tbsp. all-purpose flour
- 1 1/2 c. (6 oz.) shredded 1/3 less fat sharp Cheddar cheese
- 2 c. skim milk
- 1/2 tsp. salt
- 3 Tbsp. egg substitute
- 1/4 tsp. paprika
Directions

1Cook macaroni according to package directions, omitting salt and fat.

2Drain well and set aside.

3Melt margarine in a heavy saucepan over low heat.

4Add flour, stirring until smooth.

5Cook 1 minute, stirring constantly, until thickened and bubbly.

6Stir in salt and cheese, stirring until cheese melts.

7Gradually stir about 1/4 of hot mixture into egg substitute.

8Add remaining hot mixture, stirring constantly.

9Stir cheese sauce into macaroni and pour into a 2-quart baking dish coated with cooking spray. Sprinkle with paprika.

10Bake at 350° for 25 minutes.
