- 5 lb. beef tripe
- 1 (28 oz.) can crushed tomatoes
- 4 (8 oz.) cans tomato sauce
- 1 can water
- 3 medium size potatoes, diced
- 1 1/2 tsp. parsley
- 1/2 tsp. oregano
- 1/2 tsp. dried basil or 6 fresh leaves
- 2 Tbsp. olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
Directions

1Boil tripe for 2 hours with 1 tablespoon of baking soda to soften.

2Then rinse tripe with cold water.

3Cut into 3 x 1/2-inch strips; set aside.
