Ingredients

  • 5 lb. beef tripe
  • 1 (28 oz.) can crushed tomatoes
  • 4 (8 oz.) cans tomato sauce
  • 1 can water
  • 3 medium size potatoes, diced
  • 1 1/2 tsp. parsley
  • 1/2 tsp. oregano
  • 1/2 tsp. dried basil or 6 fresh leaves
  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced

Directions

    Boil tripe for 2 hours with 1 tablespoon of baking soda to soften.

    Then rinse tripe with cold water.

    Cut into 3 x 1/2-inch strips; set aside.
