- 4 large sweet potatoes
- 1 (8 oz.) can crushed pineapple
- 3/4 c. brown sugar
- 1 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/8 tsp. cinnamon
- 2 tsp. grated orange rind
- 1 c. canned apricots (undrained), pureed
- 2 Tbsp. butter
- 1/2 c. chopped pecans
Directions

1Cook potatoes in boiling water for 25 minutes.

2Let cool to touch; peel and cut into 1/2-inch slices.

3Arrange slices so edges overlap in greased 12 x 8 x 2-inch casserole.

4Drain pineapple; set aside.

5Combine pineapple syrup, sugar, cornstarch, salt, cinnamon, orange rind and apricot in saucepan.

6Cook over medium heat, stirring, until smooth and thickened.

7Add butter, pecans and pineapple; pour over potatoes.

8Bake at 375° for 25 minutes.
