- 1 1/2 lb. flanken, cut up into 6 to 8 pieces
- 1 large onion, diced
- 1 lb. carrots
- 4 to 6 large yams or sweet potatoes
- 1 lb. box pitted prunes
- 1 to 2 Tbsp. oil
- salt and pepper to taste
Directions

1In Dutch oven, brown flanken in oil.

2Season with salt and pepper.

3Add onion.

4Cook until golden.

5Peel and slice carrots. Peel potatoes and cut into chunks.

6Add carrots and potatoes to meat and cook on top of stove at medium heat for 45 minutes.

7Add prunes.

8Cook another 45 minutes until soft.

9Add water or chicken broth as needed.

10Stir/mix as needed.
