- 1 Tbsp. vegetable oil
- 1 onion, julienned
- 1 green pepper, julienned
- 1/2 lb. mushrooms, halved
- 1/2 tsp. garlic, chopped
- 1/4 c. tomato paste
- 2 1/2 lb. chicken breasts, dusted with seasoning salt/herb mixture (store bought)
- 2 tsp. basil leaves
- 1/2 c. chicken broth
- 2 c. tomatoes
Directions

1Saute onions and peppers in vegetable oil.

2Add mushrooms, garlic and tomato paste.

3Coat chicken breasts with seasoning salt/herb mixture.

4Brown lightly in oil.

5Add vegetable mixture and broth.

6Cook, covered, for 30 minutes.

7Add tomatoes.
-
8Cover; cook for 15 minutes.

9Serve over noodles or rice.
