  • 1 can (12 1/2 oz.) light tuna
  • 1 1/4 c. bread crumbs
  • 3/4 c. shredded Cheddar cheese
  • 1/3 c. Ranch salad dressing
  • 1/4 c. mayonnaise
  • 1 egg
  • 1/2 c. finely chopped green bell pepper or onion
  • 2 Tbsp. vegetable oil

    Set aside 3/4 cup bread crumbs.

    Combine all ingredients except oil.

    Form eight patties, coating each side with reserved bread crumbs.

    Heat 1 tablespoon oil over medium heat.

    Cook 4 patties for 4 to 5 minutes on each side.

    Add other tablespoon oil and cook remaining tuna cakes.
