- 1 can (12 1/2 oz.) light tuna
- 1 1/4 c. bread crumbs
- 3/4 c. shredded Cheddar cheese
- 1/3 c. Ranch salad dressing
- 1/4 c. mayonnaise
- 1 egg
- 1/2 c. finely chopped green bell pepper or onion
- 2 Tbsp. vegetable oil
Directions

1Set aside 3/4 cup bread crumbs.

2Combine all ingredients except oil.

3Form eight patties, coating each side with reserved bread crumbs.

4Heat 1 tablespoon oil over medium heat.

5Cook 4 patties for 4 to 5 minutes on each side.

6Add other tablespoon oil and cook remaining tuna cakes.
