  • 1 can (6 1/2 oz.) water packed albacore tuna
  • 1/4 c. chopped onions
  • 2 Tbsp. low-fat mayonnaise
  • 1 tsp. Dijon mustard
  • 1/2 tsp. curry powder
  • 1 banana, sliced
  • 4 slices pumpernickel or rye bread
  • 4 cucumber slices

Directions

    In medium bowl combine tuna, onions, mayonnaise, mustard and curry powder.

    Fold in the banana.

    Spread the mixture on 2 slices of the bread.

    Top with the cucumber and the remaining bread.
