Tuna Tabouli(Strict Fast)

Ingredients

  • 1 (7 oz.) can white tuna in water
  • 1 c. bulgur wheat
  • 2 c. boiling water
  • 1 small onion, minced
  • 1 medium tomato, chopped (take out seeds)
  • 1 c. chopped parsley
  • 1/2 c. olive oil
  • 1/2 c. lemon juice
  • 1/4 c. red wine vinegar
  • 1 tsp. salt
  • romaine lettuce

    Drain tuna.

    Soak bulgur in water 1 hour.

    Drain well. Combine with onion, tomato, parsley, oil, lemon juice, vinegar and salt.

    Break tuna with a fork.

    Fold into bulgur mixture.

    Chill. Spoon into salad bowl lined with lettuce.
