- 1 (7 oz.) can white tuna in water
- 1 c. bulgur wheat
- 2 c. boiling water
- 1 small onion, minced
- 1 medium tomato, chopped (take out seeds)
- 1 c. chopped parsley
- 1/2 c. olive oil
- 1/2 c. lemon juice
- 1/4 c. red wine vinegar
- 1 tsp. salt
- romaine lettuce
Directions

1Drain tuna.

2Soak bulgur in water 1 hour.

3Drain well. Combine with onion, tomato, parsley, oil, lemon juice, vinegar and salt.

4Break tuna with a fork.

5Fold into bulgur mixture.

6Chill. Spoon into salad bowl lined with lettuce.
