  • 3/4 lb. rotelle pasta
  • 2 cans albacore tuna, solid white, packed in water, and drained
  • 1/2 cup sun-dried tomatoes packed in olive oil, chopped
  • 2 to 3 cups frozen cauliflower, broccoli and carrots
  • 1 cup non-fat plain yogurt
  • 1/2 cup grated Parmesan cheese
  • 2 tsp. garlic powder
  • 1 tsp. pepper, freshly ground

Directions

    Boil noodles in large pot.

    While noodles are boiling, prepare sun dried tomatoes and parmesian cheeese.

    Add vegtables in with boiling pasta, when only 2 minutes until pasta is done.

    Drain pasta and vegtable mix; return to pot.

    Add sun-dried tomatoes, garlic powder, pepper, and tuna.

    Flake tuna into mixture with a fork.

    Mix thoroughly.

    Add parmesian and yogurt.

    Serve immeadiately.

    You may warm the mix on low heat for 1-2 minutes if desired.
