Ingredients
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 c. milk
- 1 small onion, studded with 8 to 10 cloves
- 1 bay leaf
- 1/2 c. dry white wine or vermouth
- a few drops to taste of Tabasco and Worcestershire sauce
- 1/4 c. grated Parmesan cheese
- salt and pepper to taste
- 2 pkg. frozen chopped spinach, thawed and drained
- 2 lb. turkey breast slices (more or less as desired)
Directions

1First, make a white sauce (Bechamel):

2Melt butter over low heat.

3Even commercial establishments have no substitute for butter.

4Add and blend flour over low heat for 4 to 5 minutes. Caution:

5Do not brown!

6With a whisk, slowly add the milk.

7Add the onion and bay leaf.

8Cook and stir with a whisk or wooden spoon until thickened and smooth, approximately 20 minutes.

9Add the wine, Tabasco sauce and Worcestershire sauce, Parmesan cheese, salt and pepper.

10Remove onion and bay leaf.

11Taste and adjust seasonings.

12Combine the chopped spinach with 2/3 of the white sauce.

13Put in a baking dish, approximately 10 x 14 x 2-inches and top with slices of turkey breast.

14Pour remaining white sauce over turkey and sprinkle with paprika.

15Bake at 350° for about 30 minutes.

16Serve with rice.
