  • 1 (about 1 1/4 lb.) pkg. The Turkey Store premium fresh lean ground turkey
  • 4 1/2 oz. (2 c.) rotini (spiral macaroni), cooked and drained
  • nonstick cooking spray
  • 1/2 c. chopped onion
  • 1/2 c. mild taco sauce
  • 8 oz. can tomato sauce
  • 4 oz. can chopped green chilies, drained
  • 1/2 to 3/4 tsp. ground cumin
  • 1 c. frozen whole kernel corn
  • 2 to 4 oz. (1/2 to 1 c.) shredded Cheddar cheese
  • 2 to 4 oz. (1/2 to 1 c.) shredded Mozzarella cheese
  • avocado wedges (if desired)
  • tomato wedges (if desired)
  • taco sauce (if desired)

Directions

    Heat oven to 350°.

    Spray 2-quart casserole and bottom of large skillet with nonstick cooking spray until well coated.

    Heat skillet over medium-high heat, about 30 seconds.

    Crumble ground turkey into skillet; add onion.

    Cook and stir 3 to 5 minutes or until turkey is lightly browned.

    Stir in taco sauce, tomato sauce, green chilies and cumin; blend well.

    Simmer 5 minutes.
