Turkey Barley Soup

Ingredients
- 2 c. chopped, cooked turkey
- 8 c. turkey stock
- 1/2 c. chopped onion
- 1/3 c. uncooked pearled barley
- 1 c. cubed potatoes
- 1 c. sliced carrots
- 1 c. frozen peas
Directions

1Combine stock, onions and barley in Dutch oven.

2Bring to a boil over high heat.

3Reduce heat to low; cover and simmer 30 minutes.

4Add potato and carrot and simmer 20 minutes more.

5Stir in turkey and peas and simmer 5 minutes more.

6Serves 8. Can be served hot over brown rice as a side dish.
