- 1 lb turkey sausage, the breakfast kind
- 12 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cheddar cheese, shredded
- 1 cup salsa
- 6 large flour tortillas
Directions

1In a large non-stick pan, crumble and cook turkey until no longer pink, about 8 minutes.

2Remove from pan.

3Wipe pan clean with paper towel and reserve for cooking eggs.

4Break eggs into a large bowl and whisk until yolks and whites are well blended.

5Season with salt and pepper.

6Pour eggs into reserved pan and scramble until desired doneness.

7In order, top each tortilla with turkey, cheese, eggs and salsa.

8Fold and serve.
