Turkey Chili!

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Large Yellow Onion, Medium Dice
  • 6 cloves Garlic, Finely Chopped
  • 13 cups Flour
  • 2 pounds Lean Ground Turkey
  • 1 Tablespoon Chili Powder
  • 2 teaspoons Cumin
  • 1 pinch Dried Oregano
  • 1 can Whole Plum Tomatoes (32 Ounce)
  • 2 cups Low Sodium Chicken Broth
  • 1 whole Jalapeno Pepper
  • 2 cans Cannellini Beans, Drained & Rinsed
  • Salt and Pepper, to taste

    In a large dutch oven or stockpot, heat the olive oil over medium heat.

    Add the onion, simmering until it turns nice & translucent, about 5-7 minutes.

    Add the garlic (if you like, add more than 6 cloves- I do!)

    & cook it another 60 seconds.

    Slowly add the flour & stir with a whisk, making sure that all the onion is coated.

    Cook for about 30 seconds and then add the ground turkey, along with the spices.

    Cook the mixture over medium heat, until the turkey is cooked through & becomes a light brown color.

    It should smell divine right about now!

    Add the tomatoes, juice & all.

    Make sure all the onion & meat gets mixed in.

    As the tomatoes heat up, gently break them apart with a wooden spoon.

    When the tomatoes are nice & broken up, add the stock & the jalapeno (if youre really daring, add two of them).

    Add salt & pepper to taste.

    Bring the whole mixture to a simmer & add the beans.

    Turn the heat up to medium & allow it to simmer for about 20 minutes.

    Turn the heat to low, cover & let it cook for about an hour.
