- 2 c. leftover turkey, cubed
- 3 c. water
- 2 or 3 slices bacon, cut up
- 1 medium onion, chopped
- 1 (16 oz.) can diced tomatoes
- 2 medium potatoes, diced
- 1/2 c. chopped carrots
- 1/2 tsp. dried thyme, crushed
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1In a large saucepan partially cook bacon; stir in onion.

2Cook until onion is tender.

3Stir in water, undrained tomatoes, turkey, potatoes, carrots, thyme, salt and pepper.

4Bring to boiling; reduce heat.

5Cover and simmer 30 to 35 minutes or until vegetables are tender.

6Mash slightly to thicken.
