Ingredients
- 2 Tbsp. salad oil
- 1/2 c. chopped onion
- 1 large green pepper, chopped
- 1 small garlic clove, crushed
- 1 (16 oz.) can tomatoes
- 2 tsp. chili powder
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 3/4 tsp. oregano leaves
- 1/8 tsp. pepper
- 1 c. regular long grain rice
- 3 c. cut up, cooked turkey or chicken
Directions

1In 12-inch skillet over medium heat, in hot salad oil, cook onion, green pepper and garlic until onion and green pepper are tender-crisp, about 5 minutes.

2Add 2 cups water, tomatoes with their liquid, chili powder, salt, sugar, oregano leaves and pepper.

3Heat to boiling.

4Stir in rice.

5Reduce heat to low; cover skillet and simmer for 25 minutes or until rice is tender and liquid is absorbed.

6Stir in turkey and heat thoroughly. Yields 4 servings.
