Turkey Frame Soup

- 1 meaty turkey frame
- 5 qt. water
- 1 onion, quartered
- 4 tsp. salt
- 3 tomatoes, quartered
- 1 tsp. dried thyme
- 1/2 tsp. dried oregano
- 8 c. fresh vegetables (any combination of uncooked sliced celery, carrots, mushrooms, chopped onion, rutabaga, broccoli and cauliflower, etc.)
Directions

1Place turkey frame in large Dutch oven with water, onion, and salt.

2Bring to boiling; reduce heat and simmer, covered, 1 1/2 hours.

3Remove turkey frame; cool till it can be handled.

4Remove meat from bones; discard bones.

5Remove onion from broth.

6Stir in fresh vegetables.

7Bring to boiling.

8Reduce heat; cover and simmer for 45 minutes.

9If desired, add homemade noodles or packaged egg noodles; simmer uncovered 8 to 10 minutes or until noodles are done.

10Can freeze leftovers.

11Makes 12 servings.
