- 2 lbs ground turkey (85/15)
- 1 (14 1/2 ounce) can tomato sauce
- 2 -2 12 cups crushed saltine crackers
- 2 -3 roasted red peppers
- 1 tablespoon garlic powder
- 1 tablespoon onion powder (or flakes)
- 1 tablespoon parsley
- 2 cups ketchup
Directions

1Pre-heat oven to 350 degrees.

2Dice roasted red bell peppers.

3You can use a jar of marinated red bell peppers.

4Combine all ingredients except ketchup.

5Mold mixture into loaf form.

6Cover meatloaf mixture with ketchup (add as much as desired).

7Bake meatloaf for 1 hour or until turkey is cooked through.

8Additional ketchup may be added after meatloaf is done baking.
