Ingredients

  • 2 lbs ground turkey (85/15)
  • 1 (14 1/2 ounce) can tomato sauce
  • 2 -2 12 cups crushed saltine crackers
  • 2 -3 roasted red peppers
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder (or flakes)
  • 1 tablespoon parsley
  • 2 cups ketchup

Directions

    Pre-heat oven to 350 degrees.

    Dice roasted red bell peppers.

    You can use a jar of marinated red bell peppers.

    Combine all ingredients except ketchup.

    Mold mixture into loaf form.

    Cover meatloaf mixture with ketchup (add as much as desired).

    Bake meatloaf for 1 hour or until turkey is cooked through.

    Additional ketchup may be added after meatloaf is done baking.
