- 2 pounds ground dark meat turkey
- 1/2 onion, grated
- 2 stalks celery, finely chopped
- 1 med carrot, grated
- 1 teaspoon Emeril's Essence
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- 1 teaspoon paprika
- 2 tablespoons ketchup
Directions

1Preheat oven to 350°F.

2In a large bowl, combine ground turkey with all remaining ingredients except ketchup, using hands to fully distribute spices throughout mixture.

3Form into 1/4-pound oval mounds and place on a parchment-lined, rimmed baking sheet.

4Bake in preheated oven for 20 minutes or until thermometer reads 165°F.

5Remove from oven and brush ketchup over tops of loaves. Return to oven and broil briefly until ketchup bubbles and sets.
