Turkey Mushroom Chowder

Ingredients

  • 1 c. sliced fresh mushrooms
  • 1/2 c. chopped onion
  • 1/2 c. shredded carrot
  • 1/2 c. chopped celery
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 crushed chicken bouillon cubes
  • 1 to 1 1/2 tsp. tarragon leaves
  • 1/4 tsp. white pepper
  • 2 c. water
  • 1 1/2 c. cubed, cooked turkey
  • 1 2/3 c. undiluted Carnation evaporated milk

Directions

    Saute mushrooms, onion, carrot and celery in butter in saucepan.

    Stir in flour, bouillon cubes, tarragon, pepper, water and turkey.

    Cover and cook 10 minutes.

    Stir in evaporated milk. Heat to serving temperature.

    Makes about 5 cups.
