  • 1 to 2 pkg. turkey sausage
  • 1 large red pepper, diced
  • 6 to 8 plum tomatoes
  • 1 large onion, diced
  • fresh garlic to taste
  • fresh parsley
  • 1 to 2 (16 oz.) cans Italian tomato sauce

Directions

    Brown sausage and slice thin in 1 to 2-inch pieces.

    Saute pepper, onion and garlic until tender.

    Add parsley, tomato sauce, plum tomatoes, cut into wedges, and sausage.

    Simmer about 1/2 to 3/4 hour.

    Serve over pasta of choice.
