- 1 to 2 pkg. turkey sausage
- 1 large red pepper, diced
- 6 to 8 plum tomatoes
- 1 large onion, diced
- fresh garlic to taste
- fresh parsley
- 1 to 2 (16 oz.) cans Italian tomato sauce
Directions

1Brown sausage and slice thin in 1 to 2-inch pieces.

2Saute pepper, onion and garlic until tender.

3Add parsley, tomato sauce, plum tomatoes, cut into wedges, and sausage.

4Simmer about 1/2 to 3/4 hour.

5Serve over pasta of choice.
