Ingredients
- 2 c. cubed, roasted turkey
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 3 Tbsp. margarine
- 1/4 c. flour
- 2 c. canned chicken broth
- 3 Tbsp. diced pimento
- 1/4 c. sliced almonds
- 1/8 tsp. pepper
- 3 c. cooked rice (white and wild)
- 1/2 c. shredded Cheddar cheese
- paprika
Directions

1Saute onion and green pepper in margarine for 3 minutes.

2Stir in flour.

3Add chicken broth gradually.

4Stir and cook over medium heat until thickened.

5Add pimentos, almonds, pepper, turkey and rice.

6Stir to combine.

7Turn into a 2-quart casserole and sprinkle cheese and paprika over top.

8Bake 30 to 40 minutes at 350°.

9Makes 6 to 8 servings.
