- 2 large egg whites
- 2 tsp. Dijon mustard
- 6 Tbsp. seasoned dried bread crumbs
- 4 (3 oz.) skinless boneless turkey breasts, pounded thin
- 2 tsp. vegetable oil
- lemon wedges for garnish
Directions

1In small shallow plate, combine egg whites and mustard.

2Blend well and set aside.

3Place bread crumbs on shallow plate; one at a time dip each cutlet first into egg mixture, then bread crumbs, coating both sides.

4In medium skillet, heat 1 teaspoon oil; add cutlets.

5Cook over medium-high heat until golden brown, about 5 minutes.

6Add remaining oil; turn cutlets.

7Cook until golden brown, about 5 minutes longer.
