Turkey Skewers

Ingredients

  • 400 g potatoes, cut into wedges
  • 2 tbsp olive oil
  • 400 g broccoli, cut into florets
  • 2 tbsp plain flour
  • 8 small turkey cutlets, about 60g each
  • 4 slices prosciutto
  • 8 None sage leaves
  • 1 clove garlic, sliced
  • 125 ml marsala wine
  • 125 ml vegetable stock

Directions

    Preheat oven to 400°F. Place the potato wedges in a roasting dish and toss with 1 tbsp of the olive oil. Season with salt and pepper and bake for about 30 minutes. Cook the broccoli in boiling salted water for about 5 mins then drain.

    Dust the turkey with flour. On each skewer, place a turkey cutlet, 1/2 slice of prosciutto and a sage leaf. Heat the remaining 1 tbsp of olive oil in a large frying pan and fry the skewers on each side for about 4 minutes. Set aside and keep warm.

    For the sauce, add the garlic to the pan and fry before deglazing with the marsala wine and vegetable stock. Cook for a couple of minutes to thicken then serve with the potato wedges, turkey and broccoli.
