  • 1 turkey carcass
  • 4 teaspoons salt
  • 1 cup carrot, grated
  • 2 chicken bouillon cubes
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 28 ounces tomatoes, chopped
  • 4 tablespoons pot barley
  • 14 cup lentils
  • 2 tablespoons rice
  • 14 cup parsley
  • 3 cups turkey, chopped

    Place carcass and salt in large pot.

    Cover with 18 cups of cold water.

    Simmer 5 hours.

    Strain and discard bones.

    Refrigerate both overnight.

    Skim fat off.
