- 8 medium potatoes
- 6 carrots
- 1 small green pepper
- 1 large onion
- 4 cloves garlic
- 1/2 c. canola oil
- 1 c. cooked turkey
Directions

1Peel and cut up potatoes in large cubes.

2Clean and slice carrots; cook both together, then drain all water.

3Chop onion, green pepper and garlic; saute until brown in oil.

4Chop turkey. Add turkey, green pepper and onion; mix with oil over potatoes and carrots and stir.

5Serve.
