Turkey Stuffing

Ingredients

  • 1 stick (4 oz.) butter
  • 2 Onions chopped
  • 4 stalks celery finely sliced
  • 2-8 whole garlic cloves
  • 2 sweet red bell peppers chopped
  • Peanut oil
  • 1 C. coarsely chopped or sliced mushrooms
  • 2 T. mixed seasonings (ie puoltry seasoning)
  • 1 C chopped nuts Cashews and walnuts)
  • 1 C. chopped parsely
  • 1/2 C wheat germ
  • 1/2 - 1 1/2 lbs whole wheat croutons (depends on turkey size; 8 oz = ~ 6 cups)
  • salt, soy sauce, brandy - optional

Directions

    saute in butter the onions, celery, garlic,and bell peppers

    In a large pan, saute the mushrooms in peanut oil.

    Combine the contents of the two pans and add the mixed seasonings, nuts, parsely, wheat germ, croutons.

    Add salt if you like.

    and maybe soy sauce or brandy to taste.

    Give it a few good stirs with a large wooden spoon.

    Lightly spoon the stuffing into the cavity of the turkey.

    makes 10-20 Cups.
