- 3 lb. yellow turnips
- 1/4 c. butter or margarine
- 1 1/2 Tbsp. sugar
- 1 1/2 tsp. salt
- pepper
- 1 1/2 tsp. lemon juice
- 3 eggs
- 1 c. bread crumbs
Directions

1Pare and cut turnips into small slices.

2Boil until tender, drain and mash hot turnips, adding butter, sugar, salt and pepper. Beat with electric mixer until blended.

3Add eggs, one at a time, and beat until fluffy.

4Stir in bread crumbs and lemon juice. Pour into 1 1/2-quart casserole.

5Cover and refrigerate until baking time.

6Bake at 375° for 50 minutes.
