Turnip Casserole

Ingredients

  • 1 1/2 lb. turnips, peeled and thinly sliced
  • 2 Tbsp. butter
  • 1 onion, thinly sliced
  • 2/3 c. celery, chopped
  • 1/2 c. green pepper, diced
  • 2 Tbsp. flour
  • 1 c. milk
  • 1/2 c. grated cheese
  • salt to taste
  • pepper to taste
  • 3 Tbsp. bread crumbs

Directions

    Cook turnips in boiling water until just tender.

    Drain. Saute in butter the onion, green pepper and celery until tender. Sprinkle with flour and cook 1 minute.

    Add milk and stir until thickened.

    Stir in cheese, salt and pepper.

    Combine cheese sauce with turnips.

    Place in baking dish and top with crumbs. Brown under broiler.

    May be prepared ahead and placed under broiler just before serving.
