- 2 Tbsp. butter
- 1 large onion, chopped
- 6 medium turnips
- 1 rutabaga, chopped
- 2 potatoes, chopped
- 6 c. chicken stock
- 1 c. heavy cream
- salt and pepper to taste
- lemon zest
Directions

1Melt butter in large pan.

2Saute onion; add peeled and chopped vegetables.

3Add chicken stock.

4Simmer 30 minutes or until vegetables are tender.

5Reserve 1 1/2 cup vegetables.

6Puree the rest.

7Return to vegetables; add cream.

8Salt and pepper to taste. Serve hot.
