  • 1 garlic clove
  • 1/2 small onion, chopped up
  • 1/4 c. parsley leaves
  • 1 (15 to 19 oz.) can white kidney beans, drained
  • 2 Tbsp. lemon juice
  • 1/2 tsp. pepper
  • 1/2 tsp. salt
  • 1 (4 oz.) jar diced pimentos, drained

Directions

    In food processor, process garlic, onion and parsley until finely chopped.

    Add beans, lemon juice, pepper and salt.

    Process until smooth.

    Stir in pimentos.

    Refrigerate if not serving immediately.

    Serve with crackers, pita slices, toasted bread or veggies.
