- 1 medium green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 fresh garlic cloves, finely chopped
- 1 12 lbs boneless skinless chicken breasts
- 2 teaspoons dried Italian seasoning, divided
- 12 teaspoon kosher salt, divided
- 18 teaspoon pepper
- 1 tablespoon extra virgin olive oil
- 1 cup fresh presliced mushroom
- 1 (28 ounce) can diced tomatoes (undrained)
- 2 teaspoons sugar
Directions

1Slice green pepper and onion.

2Chop garlic.

3Preheat large saute pan on medium high 2-3 minutes.

4Season both sides of chicken with 1 teaspoon Italian Seasoning, 1/4 teaspoon salt, and pepper.

5Place oil in pan, then add chicken.

6Cook 1-2 minutes on each side or until golden.

7Stir in peppers, onions, garlic, and mushrooms.

8Cook 2-3 minutes or until onions begin to soften.

9Stir in remaining ingredients, including diced tomatoes, 1 teaspoon Italian Seasoning, and 1/4 teaspoon salt.

10Reduce heat to medium-low and cover.

11Cook and stir 12-15 minutes, turning chicken occasionally, or until chicken is 165 degrees F. Slice chicken and serve in the tomato sauce.
