Ingredients

  • 2 c. sugar
  • 1/2 c. water
  • 1 tsp. vanilla
  • 1/2 c. corn syrup
  • 2 egg whites

Directions

    Stir sugar into corn syrup, water and dash of salt until dissolved.

    Boil to medium ball stage (240°).

    Slowly pour 1/3 over beaten egg whites, beating constantly.

    Cook remaining syrup to very hard ball stage (265°).

    Test.

    Add several drops to water.

    Beat syrup in candy mixture.

    Continue beating.

    When mixture holds its shape from a spoon, add 1 teaspoon vanilla. Drop from teaspoon onto a greased cookie sheet.
