Two Bean Chili

Ingredients

  • 1 lb. ground beef
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 2 Tbsp. chili powder
  • 1/4 tsp. pepper
  • 3 c. tomato juice
  • 1 can kidney beans, drained
  • 1 can great northern beans, drained
  • sour cream, sliced green onions, shredded cheddar cheese and chopped tomatoes for garnish

Directions

    In a 6 quart Dutch oven, over medium heat, cook beef, green pepper and onion with chili powder and pepper until beef is browned and vegetables are tender, stirring to separate meat.

    Spoon off fat.

    Add tomato juice, kidney beans and great northern beans. Heat to boiling.

    Reduce heat to low.

    Cover:cook 20 minutes, stirring occasionally.

    Makes 6 cups or 6 servings.
