Two Bean Chowder

Ingredients
- 1 c. dry small white beans
- 1 c. dry kidney beans
- 2 qt. water
- 1 smoked ham hock
- 1 c. chopped onion
- 1 clove garlic, minced
- 3/4 c. diced celery
- 3/4 c. diced carrots
- 1/8 tsp. crushed red pepper
- 1 1/2 c. milk
- salt and pepper
Directions

1Soak beans in water overnight or for quick soak, bring beans and water to a boil for 2 minutes.

2Cover and let stand 1 hour. Add ham hock to beans.

3Cover and simmer 1 1/2 hours.

4Remove ham hock and cut up meat.

5Mash a portion of the beans.

6Return meat to soup.

7Add onion, garlic, celery, carrot and crushed red pepper. Cover and simmer 1 hour.

8Add milk and heat.

9Season to taste with salt and pepper.

10Serves 6 to 8. May be made ahead and frozen.
