Two Bean Orzo With Spinach

Ingredients

  • 4 oz bacon, diced
  • 1 tbsp olive oil
  • 1 medium onion, small dice
  • 3 cloves minced garlic
  • 2-3 stalks celery, small dice
  • 2 tbsp fresh rosemary, minced
  • 2 tbsp fresh sage, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tbsp sherry vinegar
  • 2-3 cups chicken stock
  • 16 oz frozen lima beans
  • 16 oz frozen chopped spinach
  • 1 cup whole wheat orzo

Directions

    1. Render bacon on high heat, take out with slotted spoon.

    2. Add enough olive oil to sautee on medium heat onion, garlic and celery until golden brown.

    3. Add herbs and sautee for 1 minute.

    4. Add vinegar, salt and pepper and sautee for 1 minute.

    5. Add lima beans and chopped spinach and enough chicken stock to cover & cook orzo, mix well and bring to a boil, reduce to simmer.

    6. Add orzo and simmer for 10 minutes.

    7. Add salt & pepper to taste.

    8. If orzo cooked, take off heat and let sit covered for 10 minutes.
