- 3 eggs
- 1 c. cream-style corn
- 1 c. cream-style cottage cheese
- 1 c. all-purpose flour
- 1 c. yellow corn meal
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
Directions

1Beat eggs and cottage cheese until smooth.

2Stir in corn; set aside.

3In large bowl, mix all other ingredients together. Combine with egg mixture; stir just until blended.

4Bake in muffin pan at 375° for 30 to 35 minutes.
