- 1 1/2 c. sugar
- 4 Tbsp. cornstarch
- 3/4 c. juice from cherries
- 3 c. canned pitted tart red cherries (water pack)
- 1 Tbsp. butter
- 1/4 tsp. red food coloring
- pastry for 2 crust (9-inch) pie
Directions

1Combine 3/4 cup sugar with cornstarch.

2Stir in cherry juice. Cook over medium heat, stirring occasionally, until mixture thickens and bubbles.

3Cool 1 minute longer.

4Add remaining sugar, cherries, butter and food coloring.

5(Mixture will be very thick.) Let stand while preparing pastry.

6Line 9-inch pie plate with pastry; fill.

7Adjust top crust, cutting slits for escape of steam; seal.

8Bake at 400° for 55 minutes.
