Two Tomato Pasta Salad

Ingredients

  • 3 c. fresh broccoli flowerets
  • boiling salted water
  • 16 oz. pasta spirals
  • 3 Tbsp. olive oil
  • 2 large garlic cloves, minced
  • 8 green onions with tops, chopped
  • 1/4 c. red wine vinegar
  • 1 Tbsp. fresh basil, chopped
  • 1 Tbsp. fresh oregano, chopped
  • 2 Tbsp. fresh parsley, chopped
  • 1/2 tsp. fresh ground pepper
  • several dashes of hot pepper sauce
  • 1/2 lb. cherry tomatoes, halved
  • 2 medium yellow tomatoes, seeded and chopped
  • 1/2 c. freshly grated Parmesan cheese
  • salt to taste

Directions

    Cook broccoli in boiling water for 2 or 3 minutes.

    Remove and drain.

    Cook pasta; drain.

    Heat olive oil in a skillet; saute garlic well.

    Toss in green onion and broccoli and saute for a couple of minutes more.

    Blend vinegar with the herbs, pepper and hot sauce.

    Gently toss with the broccoli mixture and pasta.

    Add tomatoes and cheese.

    Add salt.

    Remember the Parmesan is salty tasting.
