Two-Way Beans

Ingredients

  • 2 cups dried beans, in any combination
  • 2 quarts water
  • 4 teaspoons dried oregano, thyme or marjoram
  • 1 bay leaf
  • 4 cloves garlic
  • 1 pound smoked turkey or chicken, skin removed, or smoked pork, fat removed, and meat cut in large chunks
  • 4 carrots, peeled and halved
  • 2 large onions, quartered

Directions

    Combine beans with water and 2 teaspoons of the dried herb and bay leaf.

    Bring to boil and boil 2 minutes.

    Remove from heat and allow to sit for 1 hour.

    Drain.

    Add 2 quarts fresh water to drained beans with remaining dried herbs, garlic, smoked meat, carrots and onion.

    Bring to a boil; reduce heat, cover and simmer 2 1/2 to 3 hours, until beans are soft but still hold their shape.

    Drain and discard the meat and bay leaf.
