  • 2 cups sugar
  • 3 eggs
  • 11/2 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup pecans, chopped
  • 1 cup coconut
  • 3 cups apples, cored, peeled and chopped *
  • 1 cup dates, chopped
  • Glaze for Apple Cake
  • Ingredients:
  • 1/2 cup of butter (1 stick)
  • 1 cup light brown sugar
  • 1/2 cup milk
  • In a small sauce pan, melt the butter and gradually add brown sugar and milk. Cook until it bubbles on low and glaze gets a little thick; stirring gently to keep from scorching.
  • Pour over cooled cake, spooning until cake is glazed and glaze sets.
