  • 1 Cucumber, large
  • 3 cups Greek yogurt, plain, full-fat
  • 3 cloves Garlic, large, fincy minced
  • 1/4 cup Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 2 tablespoons Dill, finny minced

Directions

    Finly grate cucumber and squeeze out the water using hands or cheesecloth

    Combine yogurt, garlic, oil, lemon juice, and salt in a bowl. Cover and refrigerate. Let stand at least 24 hours for best results.

    Add cucumber and fresh dill to the yogurt mixture and stir. Serve slightly chilled.
