Ingredients

  • 2 cups of thick Greek yogurt or plain yogurt
  • 8 cloves of garlic, minced
  • 2 Lg cucumbers peeled, grated, drained
  • 1/4 C Fresh Mint chopped
  • 1 tablespoon of olive oil
  • 2 teaspoons of lemon juice
  • Salt and Pepper to taste

Directions

    Lightly salt the grated cucumber and place in a colander to drain for 15 minutes. Add to the rest of the ingredients in a large bowl and mix well. The longer you let this refrigerate the more the garlic will add to the flavor.
