- 8 cloves of garlic, minced
- 2 Lg cucumbers peeled, grated, drained
- 1/4 C Fresh Mint chopped
- 1 tablespoon of olive oil
- 2 teaspoons of lemon juice
- Salt and Pepper to taste
Directions

1Lightly salt the grated cucumber and place in a colander to drain for 15 minutes. Add to the rest of the ingredients in a large bowl and mix well. The longer you let this refrigerate the more the garlic will add to the flavor.
