- 12 cucumber
- 200 g Greek yogurt
- 4 tablespoons chopped of fresh mint
- 2 garlic cloves, crushed
- 12 teaspoon dried oregano
- 1 teaspoon caster sugar
- 1 lime, juice of
- salt & freshly ground black pepper
Directions

1Grate the cucumber into a sieve set over a bowl, or finely dice.

2Try to avoid using the central seeded core as it is very watery.

3Squeeze out any excess water by pressing the cucumber down into the sieve and transfer to a bowl.

4Add the yogurt, garlic, mint, oregano, caster sugar and lime juice.

5Season to taste and chill until ready to use.

6Garnish with a sprig of mint and serve with olices and pitta bread.
