- 1 whole Cucumber
- 2 cups Plain Yogurt (Greek Style Preferred)
- 2 cloves Garlic, Minced
- 1 Small Onion
- 1 Tablespoon Olive Oil
- 1 Tablespoon White Vinegar
- 1 Tablespoon Chopped Fresh Dill (or 1 Teaspoon Dried Dillweed)
Directions

1Peel cucumber, quarter it lengthwise and remove the seeds.

2Grate it and then squeeze to remove excess moisture.

3Then put the cucumber into a small bowl with all remaining ingredients.

4Stir softly to avoid breaking down the yogurt.

5Cover and refrigerate at least 24 hours.

6Great with pita chips, dark bread (rye or pumpernickel), raw vegetables, or with a traditional Greek meal.
