  • 4 eggs, beaten
  • 1 3/4 c. sugar
  • 1/2 c. self-rising flour
  • 2 c. milk
  • 1/2 stick margarine, melted
  • 1 1/2 c. coconut
  • 1 tsp. vanilla

Directions

    Beat eggs, mix sugar and flour well.

    Add eggs then milk, margarine, vanilla and coconut.

    Pour into two (9-inch) pie pans or one deep pie pan.

    Bake at 350° for 30 to 45 minutes until coconut browns on top and pie is set.

    No pie crust is needed. Grease pie pan to eliminate pie from sticking to pan.
