Unstuffed Cabbage Rolls

Ingredients

  • 1 lb ground beef
  • 1/2 cup onion, chopped
  • 3 cups of coarsely chopped cabbage
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian spices
  • 1 tablespoon brown sugar
  • 1 tablespoon cider vinegar
  • salt and pepper
  • 1 cup quick-cooking rice

Directions

    Brown meat in a large pan, or Dutch oven over medium heat.

    Add onion and saute until onion is translucent.

    Add cabbage and stir until wilted.
  4. 4
    Add remaining ingredients except for the rice in order given.

    Mix well and bring to a boil then reduce heat, cover and simmer covered 45 to 60 minutes.

    In the last 10 minutes add the rice and continue to simmer.

    If the rice soaks up too much liquid, just add some water 1/2 cup at a time.
