- 1 1/2 c. all-purpose flour
- 3/4 c. cornmeal
- 1 Tbsp. baking powder
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 1 c. milk
- 1/3 c. vegetable oil
- 1 egg
Directions

1Peel onion; cut 6 very thin slices from center of onion. Finely chop remaining onion; set aside.

2Melt butter in a 9-inch ovenproof skillet over medium heat.

3Arrange onion slices over bottom. Cook 2 to 3 minutes or until onion is partially cooked.
