- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup butter flavored shortening, cold (recommended: Crisco)
- 1/2 cup cold water
- 1 teaspoon olive oil
- 1/4 cup sliced boneless pork cutlet
- 1/2 cup red wine (Merlot preferred)
- 3 tablespoons butter
- 3 medium Granny Smith apples, peeled, cored, chopped
- 1 medium pear, cored, chopped
- 1/2 medium orange, zested and juiced
- 1/4 cup minute tapioca
- 1/2 cup golden raisins
- 1/2 cup dark raisins
- 2 1/2 ounces dried cherries
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 3 to 5 tablespoons butter
- 3 to 5 tablespoons light corn syrup
- 1/2 cup brown sugar
- 15 to 20 walnut halves
Directions

1Preheat oven to 425 degrees F.

2Place shortening, flour and salt in bowl.

3Cut in shortening until small pea-sized pieces form.

4Add water.

5Toss with fork until mixture holds together (chill if time permits).

6Roll out half of dough to desired size.

7Place in pan sprayed with nonstick cooking spray.

8Refrigerate until needed.

9Roll out rest of dough and refrigerate.

10Scraps may be saved to cut decorations, if desired.

11Bake on cookie sheet at 425 degrees F for 10 minutes or until desired color is obtained.

12Preheat oven to 425 degrees F.

13In medium saucepan, add olive oil and heat.

14Brown sliced pork and deglaze pan with wine and butter.

15Cover and simmer for approximately 8 minutes.

16Combine remaining ingredients and mix.

17Mince pork mixture in food processor and pour over fruit.

18Mix well.

19Place in crust-lined 9-inch pie plate.

20Cover with remaining rolled out crust and seal edges.

21Bake at 425 for 50 to 60 minutes.

22When pie is removed from oven, carefully place serving plate on top of pie and invert.

23Gently lift pan away from pie with fork.

24In a medium saucepan, heat butter, corn syrup and brown sugar over medium heat until bubbling.

25Continue to cook, stirring occasionally for 1 minute or until brown sugar is completely dissolved.

26Remove from heat and place walnut halves into mixture.

27Coat and remove walnuts to a waxed paper lined cookie sheet.

28Let walnuts cool.

29Five minutes before removing the pie from the oven, reheat the caramel mixture.

30Drizzle caramel mixture over inverted pie and top with walnuts.

31Serve.
