  • 2 c. sugar
  • 2 c. white syrup
  • 2 c. heavy cream
  • 1/2 tsp. salt
  • 4 Tbsp. butter
  • 4 tsp. vanilla

    Combine sugar, syrup, cream and salt in heavy large pan. Place over low heat and stir until sugar dissolves.

    Cook to 232° (very soft ball), stirring occasionally.

    Add butter a little at a time to prevent scorching.

    Test often in cold water (240°) to determine the consistency desired in the finished caramels. Remove from heat and add vanilla.

    Pour into buttered 9 x 13-inch pan.
